Asian Coleslaw


Asian Coleslaw with Ginger Sesame Dressing
From Vanilla Bean Cafe

Prep time: 5-10 minutes
Serves 4-6

Ingredients:
Ginger Dressing
6 tbsp rice wine vinegar
3 tbsp olive oil
1 tbsp peanut butter
2 tbsp soy sauce
3 tbsp brown sugar
2 tbsp minced fresh ginger
2 clove garlic, minced
1 tsp sesame oil
1 tsp hot sauce
salt and pepper

Coleslaw
6 cups of broccoli cole slaw veggies in a bag or coarsely grated cabbage
1/2 red bell pepper sliced thinly
1 carrot julienned
3 green onions, chopped
1/2 cucumber, julienned
1/2 cup fresh cilantro, chopped

Directions:
1. Use either a pre-shredded cabbage or using a sharp nice finely chop 8 cups of cabbage. Cut the remaining vegetables and put together in a bowl and mix.

2. Prepare dressing...whisk together the ingredients for the dressing and pour some over the salad and toss. Serve immediately.

This looks easy to make. We have most of these ingredients in the kitchen, and yet our coleslaw is always the Western type, with mayonnaise. I'd love to try this one.
