Tunisian - Style Date Cake




Tunisian-style Date Cake - Torta di Datteri
From The Book of Jewish Food

Prep time: 10 minutes
Bake time: 40-45 minutes

Serves 10

Ingredients:
½ lb/250g dates, pitted and finely chopped
1 cup sugar
1 cup blanched almonds, finely chopped
4 eggs, lightly beaten
Oil and flour to prepare the cake pan

Directions:
1. Preheat the oven to 350°F/180°C.

2. Line the cake pan with parchment or waxed paper (I used a spring form for easy removal. The cake is very sticky from the dates). Rub the sides with a little vegetable oil and dust with flour.

3. Mix all the ingredients thoroughly in a bowl. Pour into the cake pan and bake for 40-45 minutes until the top is golden and a toothpick comes out dry from the center of the cake.

4. Let the cake cool in the pan on a rack before removing.

Cut in thin wedges to serve. Remember, this is very sweet and a little goes a long way. You can always come back for seconds.....I did!

IS THERE NO FLOUR OR BAKING POWDER IN THIS CAKE? NO DRY INGREDIENTS????

In fact, I went to double check the book...but the finely chopped almonds creates the "flour" for the recipe.

So in answer to your question...No! No flour, no baking powder and Yes...it's delicious.

Does this use fresh or dried dates?

Good question - it's dried dates, but try to find some that are still moist. Hard as a rock dates require soaking in a little boiling water.
